Mediterranean Recipes: Traditional Turkish Borlotti Beans (Barbunya Pilaki) in Olive Oil

Turkey is famous for its zeytinyagli (vegetables cooked in olive oil) dishes. Known as Barbunya Pilaki in Turkish, this healthy, traditional, and easy-to-cook Mediterranean dish is enjoyed cold or warm, all year round. This will certainly be one of your much-loved Borlotti bean recipes.
Fresh Borlotti beans purchased from a local farmer’s market in Bodrum, Muğla, Turkey. Borlotti beans are larger and have a pinkish-brown color.
Ingredients:
500 grams of fresh Borlotti (Cranberry) beans
1 small cup of olive oil
2 glasses of hot water
1 carrot
1 potato
1 onion
1 teaspoon tomato paste
1 clove of garlic
Juice of half a lemon
1 teaspoon granulated sugar
Salt
4 sprigs of parsley
Preparation:
Sauté Onions and Garlic: Chop the onion and sauté in a pan with olive oil until it turns pink. Grate the garlic and mix it with the onion.
Add Tomato Paste: Add the tomato paste and cook for 2 minutes.
Add Vegetables and Beans: Cut the potatoes into cubes, slice the carrots, and add them to the pan along with the Borlotti beans.
Season and Simmer: Add salt, sugar, and lemon juice. Pour in hot water, cover the pot, and cook on low heat until the mixture softens and absorbs the water.
Rest and Serve: Remove from the stove and let it rest for 15 minutes. Transfer to a serving plate, garnish with finely chopped parsley, and serve.
