2 cloves of garlic
Juice of 1/2 lemon
1 cup of cherries
1 glass of cherry juice
1 small cup of olive oil
1 teaspoon powdered sugar
1 teaspoon lemon salt
2 teaspoons salt
Preparation:
Prepare the Cherries: Remove the seeds from the cherries and set them aside. You can also use frozen cherries.
Clean the Okra: Clean the okra and soak them in lemon water to prevent them from becoming slimy.
Sauté Onions and Garlic: In a pot, heat the olive oil and add the chopped onion and garlic. Sauté for 2-3 minutes until fragrant.
Add Okra: Add the okra, salt, and sugar to the pot and mix well.
Cook with Cherries: Add the cherries and cherry juice to the pot, cover with a lid, and cook on high heat for 15 minutes.
Simmer: Reduce the heat to low and simmer for an additional 15 minutes.
Serve: Serve hot and enjoy your Mediterranean okra stew!
Tips:
Roast the onions for 3-4 minutes to release their natural sugars.
If you don't have cherry juice, water can be used as a substitute.
