Ingredients:

  • 500 grams of okra

  • 1 large onion

  • 2 cloves of garlic

  • Juice of 1/2 lemon

  • 1 cup of cherries

  • 1 glass of cherry juice

  • 1 small cup of olive oil

  • 1 teaspoon powdered sugar

  • 1 teaspoon lemon salt

  • 2 teaspoons salt

Preparation:

  1. Prepare the Cherries: Remove the seeds from the cherries and set them aside. You can also use frozen cherries.

  2. Clean the Okra: Clean the okra and soak them in lemon water to prevent them from becoming slimy.

  3. Sauté Onions and Garlic: In a pot, heat the olive oil and add the chopped onion and garlic. Sauté for 2-3 minutes until fragrant.

  4. Add Okra: Add the okra, salt, and sugar to the pot and mix well.

  5. Cook with Cherries: Add the cherries and cherry juice to the pot, cover with a lid, and cook on high heat for 15 minutes.

  6. Simmer: Reduce the heat to low and simmer for an additional 15 minutes.

  7. Serve: Serve hot and enjoy your Mediterranean okra stew!

Tips:

  • Roast the onions for 3-4 minutes to release their natural sugars.

  • If you don't have cherry juice, water can be used as a substitute.
